recruiting Chef de Partie - Pastry - Al Mana

To participate in and supervise the preparation of all dishes and garnishes of the Pastry section in accordance with Company’s established Recipe Cards /methods.

 To review daily specialties to ensure appropriate mise en place.

 To check daily mise en place according to the A la carte checklist.

 To issue orders to stores according to the daily menu, Function Sheets, and forecast.

 To guarantee that fresh and dry products are being consumed in rotation as per the FIFO procedure.

 To regularly check the following in Fridges and walking coolers:  Expiry Dates.  Cleanliness.  Hygiene and Sanitation.  Temperatures of the cold rooms.  Production Mise en place.

 To ensure Entrees are correctly garnished before being sent for service

 To ensure portion control policy/standards and plating instructions are adhered to.

 To ensure that all goods are correctly cut and cleaned, and that all waste is avoided.

 To ensure that all equipment /utensils in the section are correctly handled and maintained.

 To assist the Exec. Chef or his delegate to check all incoming / received items.

 To check and receive all store items and store them properly.

 To ensure that Company’s hygiene and Sanitation Standards are abided by in the section.

 To take on the responsibilities of Branch Chef in the absence of the latter.

 To establish and maintain effective employee relations, and assist in other sections when needed.

 To be familiar with the following procedures:  Standard Recipes.  Kitchen Manual.  Fire Procedures  First Aid Procedures.  Health & Safety Procedures.  Product, Utensil & Equipment Knowledge.  Adequate storage & waste control Procedures.

 To provide functional assistance and direction to the personnel deployed in the Pastry Section.

 To interact and cooperate with other kitchen sections as appropriate.
